I love Jesus, but I drink a little

I ended up purchasing a 9x8 pan at Crate & Barrel. It's far superior to my crummy 8x8. The cheesecake squares were delish, but a bit runny in the middle. I think it may have been under cooked.

Also, I was a bit ill this morning and I blame licking the batter spoon. Raw eggs and all that.

I remember a time, back in the late 90s, when I thought nonsense like this mattered somewhat more than I do now. Now I see well-educated people yammering about the birth control choices of their daughters, or gay marriage, and I think they are morons.

Oh please. Your health record is appalling, and you want to blame the eggs?

Hehe, I know. I was joking.

I made my pie crusts last night, assmebly-line fashion. Let me sing the praises of my baking scale yet again!

I made Julia's gingerbread cake over the weekend and it was excellent. One of my other gingerbread recipes suggested a couple of grinds of black pepper for some extra zing, so I threw that in. I didn't think it was so much, but when my dad affably offered a crumb to the rabbit, his entire lip sneered up like David Bowie and he ran into another room. So maybe less pepper next time.

Coconut cream pie: Top with freshly whipped cream, or do a meringue?

I've always used whipped cream, and I do not know how to make a meringue, but I'm willing to try.

Please answer soon! I have taken the day off work to bake pies, and I need to make a decision right away!

Crispy Girl -- Wednesday, November 24, 2004 -- 03:43:07 PM -- 3550 of 13465

I thought cream pies were topped with whipped cream. I'm against coconut in general, but my vote is for the cream.

MsIt -- Wednesday, November 24, 2004 -- 03:43:09 PM -- 3551 of 13465

Whipped cream.

A. Juli Brissin -- Wednesday, November 24, 2004 -- 03:57:39 PM -- 3552 of 13465

I'm leaning toward the whipped cream (with some baked coconut sprinkled on top!) because I know I can't screw that up. I'll bake the pie now, refrigerate it, and then top it with whipped cream tomorrow.

I wondered about the meringue because my mother always topped her cream pies with meringue, even though they are CREAM pies.

And anyone who doesn't like coconut cream pie makes Baby Jesus weep.

well, if you top them with whipped cream it's a cream pie. If you top that same pie with meringue it's a meringue pie. I haven't had coconut cream pie in ages.

I'd like to tell you I'm not supressing a snicker after typing "cream pie" so many times, but lying makes Baby Jesus weep, too.

You said "cream pie".

Crispy Girl -- Wednesday, November 24, 2004 -- 04:06:57 PM -- 3555 of 13465

Since we share a birthday, I am the Baby Jesus. And I don't cry over coconut cream pie.

MsIt -- Wednesday, November 24, 2004 -- 04:09:00 PM -- 3556 of 13465

Actually, I prefer coconut custard pie, sans topping, to coconut cream pie, but anything with coconut has my deep appreciation.

Speaking of coconut, my best friend is coming to visit for the weekend, and we are going to do all of our holiday treat-making together, and freeze them for Christmas. I think I'll put macaroons on the list. Mmmmm!

My list so far includes sugar cookies, buckeyes, snickerdoodles, Russian tea cakes, and spritzes.

Mmmmm, the cooks at my uncle's restaurant make the BEST coconut cream pie and you can get it with either cream or meringue topping.

The Cook's Illustrated lemon bars are gooood! Whatever the cracking in the crust was about, it was no problem. The curd is still a little soft this morning, so I'll give it a couple more minutes of cooking time next batch, but they are lemony and rich and tender and yum.

Now I want to try Rose's but there's also the "don't mess with success" approach...

Crispy Girl -- Wednesday, November 24, 2004 -- 05:30:05 PM -- 3560 of 13465

Hooray! I wish I had a lemon bar right about now.

I always cut them very small- a full-sized lemon bar is an awfully big commitment- and I won't pretend I didn't eat one for breakfast.

Crispy Girl -- Wednesday, November 24, 2004 -- 05:34:09 PM -- 3562 of 13465

Right now I'm so hungry and so crabby I could definitely commit to a whole lemon bar.

I'll stop talking about them, since I can't teleport them.
